In Malaysia I got a great downtown apartment in Kuala Lumpur for around $500, then spent probably $1000 per month while eating out most meals. If you lived outside of the city center and you cooked most meals, you could probably get below $1000 per month total.
In Thailand you can get an apartment for slightly more than in Malaysia and you can get delicious street food dinner every day for around $2-$3.
Latin America is usually more expensive than Southeast Asia, especially countries like Costa Rica and Argentina. The cheapest parts of Latin America that I’ve personally been to are Colombia and Peru, where you can live pretty comfortably for $1500 per month. You can live in smaller, less tourist-y towns in Mexico for around the same amount, or Mexico City for around $2000 per month.
